ABOUT
CHEF TROY LEVY
Food matters to me because I believe it has the power to heal.
When you consume the right food, it does something good to your body - not just physically, but in how you feel, how you move, and how you live.
I was born in Jamaica, a place that taught me how to work creatively with simple ingredients.
Growing up, I learned that you don’t need excess to create something nourishing and full of flavour. You need intention, respect for the land, and an understanding of where food comes from. Those early lessons continue to guide the way I cook today.
My work is rooted in Ital food traditions.
Natural, plant-based cooking that honours life, balance, and simplicity. For me, Ital is not just about what’s on the plate. It’s a culture, a lifestyle, and a way of caring for the body and the community.
Sharing Ital food is my way of sharing my culture - a piece of myself.
Whenever I create a dish, no matter how simple, the person who eats it is invited into an intimate experience of what I offer and what I stand for. Through meals, workshops, and classes, I hope people can feel that connection - not as instruction, but as experience.
Teaching is an important part of my work.
Whether I’m cooking with children, leading workshops, or sharing meals across different countries, my intention is the same: to educate, encourage, and inspire. Not to convert anyone, but to offer another way - an option to experience Ital food, culture, and lifestyle in a way that feels open and personal.
Sharing Ital with the world is my gift.
An invitation to explore food as nourishment, culture, and connection - so we can grow individually and together.
Throughout my journey, I’ve shared Ital food across different continents, countries and communities, learning how my own culture blends with others - always enriching body, mind and soul.
